Raw Moringa Cheesecake Bars are not only delicious but can help boost your intake of protein and help you recover after physical activity, helping your body get back on track, and feel much better in the process.
Follow this delicious recipe:
Ingredients:
Crust:
1 cup medjool dates
Pinch of cinnamon
Pinch of salt
2 cups pecans
1 ½ tbsp coconut oil
Filling:
1 ½ cup raw cashews (soaked in boiling hot water 30 minutes)⅔ cup coconut cream
2 tbsp OMG Moringa protein blend
1 ½ tbsp date syrup (can do more if you want sweeter)
½ tsp vanilla extract
½ cup water
Juice of ½ lemon
Chocolate drizzle:
Sweetened chocolate chips
Coconut oil
Directions:
Crust:
Line a baking pan with parchment paper.
Combine all crust ingredients in a food processor. Combine until the texture looks crumbly and sticky.
Press the mixture onto the lined baking pan with a spatula or with your hands. Make sure it is even and spread all the way through. Set it to the side.
Filling:
If you haven’t already, boil water for 1 ½ cups of cashews. Take off heat and let them sit in water for 30 minutes.
Using a blender, blend all of the ingredients listed under filling up above. Blend for about 5-7 minutes or until you get a creamy texture. This is where you can adjust date syrup for sweetness.
Add the mixture on top of the crust and freeze for at least 4 hours.
Take out from the freezer and cut into squares.
Drizzle:
Melt chocolate chips with a dash of coconut oil and drizzle on top of the squares.
Store in the fridge or freezer and enjoy!
