Superfood S’mores Bars

Ingredients:

Crust:

  • 1 1/2 cup graham cracker crumbs
  • 4 Tbsp salted butter (melted)

Filling:

  • 1 can full fat coconut milk
  • 1 cup chocolate chips
  • 1/2 cup OMG! Cacao Powder
  • 2 Tbsp arrowroot starch
  • 1tsp vanilla

Topping:

  • 1 cup mini marshmallows

Directions:

For the crust, mix together the graham cracker crumbs and melted butter and press into the bottom of a small baking pan. Bake @ 350 for 12-14 minutes. Allow to cool completely. For the filling melt together everything except the arrowroot starch in a small pan on the stove. Once everything is melted down and combined well, add in the arrowroot powder and cook for 1 minute then remove from the heat. Cool for about 15 minutes. Pour cooled mixture into cooled graham cracker crust. Place in the freezer for 4 hours or overnight. For the marshmallow topping - remove from the freezer and top with 1 cup mini marshmallows. Turn your oven to broil and place bars into the oven until marshmallows are golden brown. Remove from the oven and enjoy immediately, or store in the freezer for a frozen treat later.
