Maca Walnut Gluten Free Scones

Ingredients -

2 cups oat flour
1 cup almond flour
1Tbs baking powder
2tsp OMG! Maca Powder
1/4tsp salt
1/3 cup cold butter
3/4 cup cold canned coconut milk
2Tbs maple syrup
2 eggs
1/2 cup chopped walnuts

Directions -

Start by preheating your oven to 400 degrees, and cutting up 1/3 cup butter into cubes and placing it in the freezer. In a medium sized bowl combine both flours, baking powder, maca powder, and salt. Remove butter cubes from the freezer and use your hands (or a pastry cutter) to incorporate the butter into the flour mixture until it resembles a course crumble. In a separate small bowl, whisk together the eggs, coconut milk, and maple syrup. Pour this into the flour mixture and use a fork to mix together until just combined. If it still seems pretty wet add in a little extra oat or almond flour. You want it to be a little wet, but not sticky. Remove the dough from the bowl and place onto a well-floured surface. Sprinkle some oat flour on top of the dough and use your hands to knead it, folding it over onto its self about 3 times. Use your hands to flatten and shape the dough into a circle, it should be about 1/2" thick. Use a knife to cut the dough into 8 triangles. Place triangles onto a greased or parchment paper lined pan, and place into the oven. Baked for 20-25 minutes or until a nice golden brown color. Allow scones to cool completely and then top with your favorite nut butter, or icing recipe. Store scones in an airtight container and consume within 4 days.
