Pumpkin Chocolate Chunk Cookie Recipe

RECIPE (yields 20-24 cookies)


1/2 cup pumpkin puree

1/2 cup peanut butter

1/2 cup brown sugar or coconut sugar

1/4 cup OMG! Pumpking Seed Protein

1/2 cup GF all-purpose flour

2/3 cup oats

2 tbsp maple syrup

1 tbsp vanilla

2 tsp pumpkin spice

1 flax egg

1/2 tsp baking powder

Pinch of salt

1/3 cup each choc chunks & pecans


Preheat oven to 350 F. Prepare flax egg by combining 1 tbsp flax meal and 2 tbsp water and set aside. In a medium bowl, whisk all dry ingredients together. In large bowl, add all wet ingredients and mix with hand mixer until well combined. Slowly add in dry ingredients. Once well mixed, fold in chocolate chunks and pecans. Bake for 10-12 mins and enjoy!
